Nutty Nutrition

Nutrition fit for a king

Picture
I couldn't believe my eyes!  Cliff bars in coconut!  What took them so long!  Our family literally survives on these energy packed bars of wonderful goodness.  I make sure that Bobby has them when he goes to DC.  He eats one for breakfast and lunch.  Sometimes they are the only thing that he has eaten all day until eight or nine at night.  I am so thankful for these bars!  I subscribe to them on Amazon and they end up being less than a dollar a piece with free delivery.  They come to my door twice a month.  We have a pretty good stock pile.  They are really good to have on long car rides.  I hate stopping for fast food.

Because I love coconut I decided to research it's benefits.   I found this web site, http://www.coconutresearchcenter.org/savethechildren.htm

Sometimes you feel like a nut

This is an adult beverage
Replace the chocolate liqueur with Hershey's chocolate syrup for the kids to enjoy.

Spiked Almond Joy Milkshakes
Makes 6-8 mini milkshakes

For the milkshake
3 cups packed French vanilla ice cream
1/2 cup stirred coconut milk
1/4 cup almond liqueur (I used Amaretto)
1/4 cup chocolate liqueur (I used Godiva)

For serving
Chocolate syrup
Whipped cream
Shredded sweetened coconut
Whole almonds

Combine the ice cream, coconut milk, almond liqueur, and chocolate liqueur in a blender and mix until smooth. Adjust ingredients if desired.
I like a creamy milkshake. If you want it thicker, add more ice cream. If you like more almond flavor, add more Amaretto, etc.

Place the jar containing the milkshake back in the freezer for about 30 minutes to an hour to let it thicken up a bit. Puddle chocolate syrup in the bottom of a serving glass (I used shot glasses) and pour the milkshake over the syrup. Top each shake with a pile of whipped cream, a generous sprinkle of shredded coconut and a whole almond.

This recipe can be easily doubled - just make sure to adjust the ingredients to your personal taste. Do not make this too far in advance or the consistency will be icy.
